Cozy, nourishing and full of fall flavor, without turning dinner into a three-hour project.


There’s something about fall that makes us want to slow down, pull out the good mugs and make something warm. But cozy food doesn’t have to mean heavy food.


Some of the season’s best ingredients, sweet potatoes, apples, squash, Brussels sprouts, cinnamon, ginger and hearty greens, also happen to be incredibly easy to turn into meals that feel indulgent while still delivering plenty of nourishment.


So, consider this your fall reset: five simple recipes made for cooler evenings, busy weekdays and those weekends when staying home suddenly sounds better than going anywhere.


1. Maple Dijon Salmon with Roasted Sweet Potatoes & Brussels Sprouts

The vibe: Sunday dinner without the Sunday-dinner workload. Sweet potatoes and Brussels sprouts get beautifully caramelized in the oven while a maple-Dijon glaze gives salmon that perfect combination of savory, tangy and slightly sweet.


You'll need:

  • 4 salmon fillets

  • 2 medium sweet potatoes, cubed

  • 3 cups Brussels sprouts, halved

  • 2 tablespoons olive oil

  • 1 tablespoon pure maple syrup

  • 1½ tablespoons Dijon mustard

  • 1 clove garlic, minced

  • 1 teaspoon lemon juice

  • Salt and black pepper

  • Optional: fresh thyme or rosemary


Make it:


Heat the oven to 425°F.


Toss the sweet potatoes and Brussels sprouts with olive oil, salt and pepper. Spread them on a sheet pan and roast for about 20 minutes.


Meanwhile, whisk together the maple syrup, Dijon mustard, garlic and lemon juice.


Move the vegetables slightly to make room for the salmon. Place the fillets on the pan and brush generously with the maple-Dijon mixture.


Return everything to the oven for another 10–14 minutes, or until the salmon is cooked through and flakes easily.


Finish with fresh herbs and a squeeze of lemon.

The vibe: A blanket, a good show and absolutely nowhere else to be. This velvety soup gets its creaminess from blended squash rather than loads of heavy cream. Fresh ginger gives it just enough warmth to make it interesting.


You'll need:


  • 1 medium butternut squash, peeled and cubed

  • 1 small yellow onion, chopped

  • 2 carrots, chopped

  • 2 cloves garlic

  • 1 tablespoon fresh grated ginger

  • 4 cups low-sodium vegetable broth

  • 1 tablespoon olive oil

  • ½ teaspoon cinnamon

  • Pinch of nutmeg

  • Salt and black pepper

  • ½ cup unsweetened coconut milk, optional

  • Pumpkin seeds for topping


Make it:


Heat olive oil in a large pot over medium heat.

Add onion and carrots and cook until softened. Add garlic and ginger and cook for another minute.

Add the squash, broth, cinnamon, nutmeg, salt and pepper.


Bring everything to a boil, then reduce the heat and simmer for approximately 20–25 minutes, until the squash is completely tender.


Carefully blend until smooth using an immersion blender. Stir in coconut milk if you'd like an even creamier texture.


Serve topped with pumpkin seeds and freshly cracked pepper.

Bowls are one of the easiest ways to pack vegetables, protein, healthy fats and whole grains into one meal—and this one tastes unmistakably like fall.


You'll need:


  • 2 cups cooked quinoa

  • 2 cooked chicken breasts, sliced

  • 1 medium sweet potato, roasted and cubed

  • 2 cups chopped kale

  • 1 crisp apple, thinly sliced

  • ½ cup dried cranberries

  • ½ cup chopped walnuts or pecans

  • ¼ cup crumbled feta or goat cheese, optional


For the dressing:


  • 3 tablespoons olive oil

  • 1½ tablespoons apple cider vinegar

  • 1 teaspoon Dijon mustard

  • 1 teaspoon maple syrup

  • Salt and pepper


Make it:


Whisk together all dressing ingredients.

Massage the kale with a small spoonful of dressing for a minute or two. Yes, massage it, it softens the leaves and makes raw kale significantly better.


Divide quinoa among bowls and add chicken, roasted sweet potato, kale, apple, cranberries and nuts.

Finish with feta or goat cheese and drizzle with the maple-cider dressing.


Make it vegetarian: Swap the chicken for roasted chickpeas.

Acorn squash creates its own beautiful serving bowl, making this one perfect for a cozy dinner with friends when you want it to appear that you made significantly more effort than you actually did.


You'll need:


  • 2 acorn squash

  • 1 pound lean ground turkey

  • 1 small onion, diced

  • 1 apple, diced

  • 2 cups baby spinach

  • 1 clove garlic, minced

  • ½ teaspoon dried sage

  • ½ teaspoon thyme

  • ¼ teaspoon cinnamon

  • ¼ cup chopped pecans

  • Olive oil

  • Salt and pepper


Make it:


Heat the oven to 400°F.

Cut each squash in half and scoop out the seeds. Brush lightly with olive oil and season with salt and pepper.


Place cut-side down on a baking sheet and roast for approximately 30–35 minutes. While the squash cooks, brown the turkey in a skillet. Add onion and garlic and cook until softened.


Stir in the apple, spinach, sage, thyme and cinnamon. Cook just until the spinach wilts and the apple begins to soften.


Turn the roasted squash over and generously fill each half with the turkey mixture.


Top with chopped pecans and return to the oven for another 8–10 minutes.

5. Warm Cinnamon Apple Oatmeal with Pecans

The vibe: Your morning deserves better than a granola bar eaten in the car.


Fall breakfast doesn't get much easier, or more comforting than warm apples and cinnamon.


You'll need:


  • 1 cup old-fashioned rolled oats

  • 2 cups milk or unsweetened plant milk

  • 1 apple, diced

  • 1 teaspoon cinnamon

  • ¼ teaspoon vanilla extract

  • 1 tablespoon chia seeds

  • 2 tablespoons chopped pecans

  • 1 teaspoon maple syrup, optional

  • Pinch of salt


Make it:


Add the oats, milk, half of the diced apple, cinnamon and salt to a saucepan.


Cook over medium-low heat for approximately 5–7 minutes, stirring occasionally, until creamy.

Stir in vanilla and chia seeds.


Spoon into bowls and top with the remaining apple, pecans and a light drizzle of maple syrup.


For extra protein, add a spoonful of Greek yogurt or your preferred nut butter.


Gold Coast Tip: Make several servings at once and refrigerate them. Add a splash of milk before reheating and breakfast is ready in minutes.


Fall Food Doesn't Have to Be Complicated


Eating well tends to become much easier when we stop treating it like a project.


You don't need perfectly portioned containers lined up in your refrigerator. You don't need an expensive ingredient you've never heard of. And you certainly don't need every meal to qualify as a wellness masterpiece.


Sometimes wellness looks like salmon and roasted vegetables. Sometimes it's a bowl of soup. And sometimes it's warm cinnamon oatmeal eaten in your pajamas on a Saturday morning. The goal isn't perfection, it's finding food that nourishes you and makes you look forward to eating it.
